Description

Celebrate life’s most precious milestones with this ethereal white cake, featuring a tender crumb and a cloud-like texture. Its signature star-piped buttercream and pure vanilla profile make it an elegant centerpiece for any sacred family gathering.

Ingredients

  • 112 g (1/2 cup) unsalted butter, softened
  • 1 cup vegetable oil
  • 600 g (3 cups) granulated sugar
  • 9 egg whites, room temperature
  • 528 g (4 cups + 2 tablespoons) all-purpose flour
  • 4.5 teaspoons baking powder
  • 1.5 teaspoons salt
  • Whole milk
  • Pure vanilla extract
  • Salted butter (for buttercream)
  • Powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and thoroughly grease and flour your cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  3. Using a stand mixer with a paddle attachment, beat the softened unsalted butter for 2 minutes until creamy, then add sugar and oil and beat until fluffy.
  4. Incorporate the pure vanilla extract, scraping down the sides of the bowl to ensure a uniform mixture.
  5. Gradually add the dry ingredients and the milk to the mixer, alternating between the two and beginning and ending with the flour mixture.
  6. In a separate, grease-free bowl, whisk the 9 egg whites until they form stiff peaks.
  7. Gently fold the whipped egg whites into the batter one-third at a time using a spatula, being careful not to deflate the air.
  8. Divide the batter evenly between the prepared pans and bake for 35-40 minutes, or until a toothpick comes out clean.
  9. Cool the cakes in their pans for 20 minutes before transferring them to a wire rack to cool completely.
  10. To make the buttercream, beat salted butter until airy, then gradually whip in powdered sugar, vanilla, and milk for 5 minutes.
  11. Stack the cooled layers with frosting and decorate the exterior using a star-shaped piping tip for a professional finish.

Notes

To ensure your cake maintains its snowy white color, avoid over-baking which can lead to excessive browning on the edges. Using room temperature ingredients is essential for the egg whites to reach their full volume, providing the light and airy structure that defines this traditional Southern celebration dessert.
