Description

Create a charming, rustic centerpiece with this delightful bear cake recipe. Using chocolate sponge layers, velvety buttercream fur, and simple cookie accents, you can craft a whimsical woodland creature that is as delicious as it is adorable.


Ingredients

  • Two 8×3 inch round chocolate cakes
  • One 8-inch chocolate dome cake
  • 4 cups thick chocolate buttercream icing
  • Small amount of black icing
  • 3-4 chocolate chip cookies
  • Large eyeball sprinkles
  • 5 wooden dowels
  • One 8-inch thin cake board


Instructions

  1. Bake the round and dome cakes and allow them to cool completely on a wire rack.
  2. Level the tops of the round cakes with a serrated knife and trim the dome if necessary for a flush fit.
  3. Place one round cake on a stand and insert five wooden dowels, trimming them flush with the cake surface.
  4. Spread icing over the base, add the cake board, then stack the second round and the dome cake with icing between layers.
  5. Apply a thin crumb coat of chocolate buttercream over the entire cake and chill for 20 minutes to set.
  6. Use a star tip and piping bag to cover the cake in small buttercream stars to resemble fur.
  7. Press two cookies into the top for ears and one on the front for a snout; pipe details using black icing and add eyeball sprinkles.

Notes

For the best results, ensure your cakes are completely chilled before carving or stacking to prevent crumbling. If your buttercream starts to feel too warm while piping the fur, place the piping bag in the refrigerator for a few minutes to maintain the sharp definition of the stars. You can substitute the chocolate chip cookies with round sandwich cookies or even fondant circles if you prefer a different look for the ears and snout.
