Description
Elevate a simple boxed cake mix into a gourmet dessert with the addition of rich sour cream and pure vanilla extract. This method produces a moist, professional-quality crumb that is perfect for any family celebration or church potluck.
Ingredients
- 1 box (approx. 15.25 oz) cake mix (yellow, white, or chocolate)
- Water (amount specified on the cake mix box)
- Vegetable oil (amount specified on the cake mix box)
- Large eggs (amount specified on the cake mix box)
- 1 cup full-fat sour cream
- 2 teaspoons pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease and line two 9-inch round cake pans with parchment paper.
- In a large mixing bowl, combine the cake mix, water, oil, eggs, sour cream, and vanilla extract.
- Beat the ingredients using a hand mixer on high speed until the batter is smooth, thick, and glossy, ensuring you scrape the sides and bottom of the bowl with a spatula.
- Pour the batter evenly into the prepared pans and smooth the tops with a spatula.
- Bake according to the timing on the cake mix box (usually 25 to 30 minutes) or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in their pans for 10 minutes before transferring them to a wire rack to cool completely.
Notes
To ensure a perfectly smooth batter, allow your eggs and sour cream to reach room temperature before mixing. If you are using a chocolate cake mix, try swapping the vanilla extract for two teaspoons of espresso powder to create a deeper, more intense cocoa flavor.
