Ingredients

  • 1 box (15.25 oz) yellow cake mix
  • Water, vegetable oil, and eggs (quantities per cake mix box instructions)
  • 1 container (16 oz) chocolate frosting
  • 12-16 oz candy melts
  • Vegetable oil or shortening (optional, for thinning coating)
  • Lollipop sticks
  • Assorted sprinkles


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Combine the cake mix, water, oil, and eggs in a large bowl and mix on medium speed for 2 minutes.
  3. Pour into the prepared pan and bake for 28 to 33 minutes, or until the internal temperature reaches 205°F.
  4. Cool the cake completely on a wire rack for at least 1 hour until the crumb is firm.
  5. Crumble the cooled cake into a large bowl until it reaches a fine, uniform, sand-like texture.
  6. Stir in the chocolate frosting until the mixture reaches a pliable, dough-like consistency that holds its shape.
  7. Roll the mixture into eighteen 1.5-inch spheres and place them on a parchment-lined baking sheet.
  8. Refrigerate the cake balls for 30 minutes to firm up, ensuring they do not freeze.
  9. Melt the candy melts in a microwave-safe bowl in 20-second intervals, stirring until smooth.
  10. Dip the tip of a lollipop stick into the melted coating and push it halfway into a chilled cake ball to anchor it.
  11. Allow the anchor to set for 5 minutes before gently dipping the entire ball into the coating.
  12. Tap the stick against the bowl to remove excess coating and place upright in a styrofoam block to cure, applying sprinkles immediately.

Notes

To achieve a perfectly smooth finish, ensure your cake crumbs are extremely fine before adding the frosting. If your candy coating is too thick, stir in a teaspoon of shortening to improve the flow, and always avoid freezing the cake balls as the resulting expansion can cause the outer shell to crack.
