Ingredients
- 3 boxes yellow cake mix (plus oil, eggs, and water as specified on packaging)
- 4 containers white frosting
- 9 flat-bottom ice cream cones
- 5 pointed sugar cones
- Pink sanding sugar
- Mini marshmallows
- Candy flowers
- Small amount of white fondant
- Shredded coconut (tinted with green food coloring)
- Pink food coloring
Instructions
- Prepare cake batters and bake two 8-inch round cakes and two 9×13-inch rectangular cakes according to package directions; let cool completely on wire racks.
- Frost the exterior of nine flat-bottom cones and five sugar cones with white frosting, roll them in pink sugar until coated, and refrigerate to set.
- Level the tops of all four cooled cakes using a cake leveler or serrated knife to ensure flat, stackable surfaces.
- Stack the two rectangular cakes with a layer of frosting in between, then frost the entire exterior of this base.
- Stack the two round cakes in the center of the rectangular base, applying frosting between the layers and on the outside.
- Carve a small curved notch out of each of the four corners of the rectangular cake base to nestle the towers.
- Secure the flat-bottom cones into the notches with frosting, stacking them for extra height where desired, and place pointed sugar cones on top for roofs.
- Decorate the structure with marshmallow battlements, fondant windows and doors, and pink-tinted frosting accents before adding coconut ‘grass’ around the base.
Notes
For added stability, consider chilling your cake layers in the freezer for 30 minutes before carving the notches for the towers. This helps prevent the crumb from tearing and makes the frosting process much smoother during assembly.
