Ingredients

  • 250g all-purpose flour
  • 400g caster sugar
  • 45g dark cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 240ml strong black coffee, hot
  • 120ml olive oil
  • 120ml whole milk
  • 2 large eggs
  • 250g cream cheese, room temperature
  • 200ml sweetened condensed milk
  • 200ml heavy cream
  • 1 teaspoon vanilla extract
  • 100g dark chocolate, chopped
  • 1 cup chocolate cereal


Instructions

  1. Preheat your oven to 175°C (350°F) and grease a standard cake pan with butter or oil.
  2. In a large mixing bowl, sift together the flour, caster sugar, baking powder, bicarbonate of soda, and dark cocoa powder to ensure a light texture.
  3. Create a well in the dry ingredients and add the eggs, olive oil, and milk, stirring steadily from the center.
  4. Slowly pour the hot, strong black coffee into the batter, stirring until the mixture is completely smooth and glossy.
  5. Pour the batter into the prepared pan and bake on the center rack for 30 to 35 minutes, or until a toothpick comes out clean.
  6. Let the cake rest in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  7. Whip the room-temperature cream cheese until smooth, then slowly add the condensed milk, heavy cream, and vanilla, whipping until the frosting is fluffy and spreadable.
  8. Prepare the ganache by pouring hot heavy cream over chopped dark chocolate; let sit for one minute, then stir until smooth.
  9. Toss the chocolate cereal with a small amount of melted chocolate and extra cocoa powder to create a crunchy topping.
  10. Apply a generous layer of frosting to the cold cake, pour the ganache over the top, crown with the cereal mixture, and refrigerate for two hours before serving.
