Ingredients

  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 cup natural peanut butter (xylitol-free)
  • 1/4 cup cooking oil (sunflower or coconut)
  • 1 cup finely shredded carrots
  • 1/4 cup local honey
  • 1 large egg
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C) and grease a 6-cup ring mold or fluted tube pan with coconut oil.
  2. In a large mixing bowl, whisk together the egg, honey, peanut butter, oil, and vanilla extract until the mixture is smooth and cohesive.
  3. Stir in the shredded carrots using a spoon or spatula until they are evenly distributed throughout the wet ingredients.
  4. Sift the flour and baking soda over the mixture and fold them in gently until just combined.
  5. Spoon the thick batter into the prepared pan and bake in the center of the oven for 40 minutes, or until a toothpick comes out clean.
