Growing up in Virginia, our family gatherings were usually anchored by a classic pound cake or a rich chocolate sheet cake. But I believe Southern hospitality is about making room at the table for new flavors, and this Green Cake—infused with the earthy, aromatic notes of green tea—has earned its spot. It offers a sophisticated twist on tradition that surprises and delights every time I serve it.

What makes this recipe truly special is the texture. By using a combination of oil and plain yogurt, we achieve that signature moist, tender crumb that marks a Cake Peak favorite. The natural bitterness of the tea is perfectly balanced by the sweet, tangy cream cheese frosting, creating a dessert that is as beautiful to look at as it is to eat.

A Unique Flavor Experience

This cake is a conversation starter. The vibrant color comes naturally from the powdered green tea, meaning no artificial dyes are needed to get that lovely hue. It is the perfect balance of savory and sweet, making it an excellent choice for those who find standard birthday cakes a bit too sugary.

The crumb is exceptionally moist thanks to the yogurt, and the cream cheese frosting adds a creamy, tangy finish that ties everything together. Whether you are hosting a tea party or just want to try something different for Sunday dessert, this recipe delivers on both flavor and presentation.

Description

Experience a sophisticated twist on Southern hospitality with this vibrant Green Cake, featuring a moist, tender crumb infused with aromatic matcha. Topped with a tangy cream cheese frosting, this naturally colorful dessert is as visually stunning as it is delicious.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup cake flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 teaspoons powdered green tea (matcha), plus extra for dusting
  • 1 1/2 cups white sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 cup plain yogurt
  • 4 cups confectioners’ sugar
  • 2 teaspoons powdered green tea (for frosting)
  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
  2. In a medium bowl, sift together the all-purpose flour, cake flour, baking soda, salt, and 4 teaspoons of matcha powder.
  3. In a separate large mixing bowl, beat together the white sugar, vegetable oil, and eggs until smooth, then stir in 1 1/2 teaspoons of vanilla extract.
  4. Add the dry flour mixture to the wet ingredients alternately with the plain yogurt, beginning and ending with the flour mixture, mixing only until just incorporated.
  5. Pour the batter evenly into the prepared pans and bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 30 minutes before transferring them to a wire rack to cool completely.
  7. Prepare the frosting by sifting the confectioners’ sugar and 2 teaspoons of matcha together, then beat the softened butter, cream cheese, vanilla, and milk in a bowl until smooth.
  8. Gradually add the sugar-tea mixture to the cream cheese base and beat until creamy, then frost the cooled cake layers and finish with a light dusting of matcha.

Notes

To ensure the most vibrant green color, store your matcha powder in a cool, dark place as light and heat can cause the powder to oxidize and turn brown. If the cake layers feel too soft to frost, try chilling them in the refrigerator for 20 minutes to firm up the crumb before assembling.

The Pantry List

To bake this beautiful cake, you will need a few specific items. Quality matters here, especially with the tea powder.

  • Flour Blend: We use a mix of all-purpose flour and cake flour. This combination provides enough structure to hold the cake up while ensuring a soft, velvety texture.
  • Powdered Green Tea (Matcha): This gives the cake its distinct flavor and color. Look for culinary grade matcha for the best results.
  • Plain Yogurt: This is the secret weapon for moisture. It adds a slight tang and keeps the crumb tender for days.
  • Vegetable Oil: Unlike butter, oil remains liquid at room temperature, which guarantees a moist cake.
  • Eggs: Three large eggs bind the batter together and provide richness.
  • Cream Cheese & Butter: The base of our frosting. Make sure they are fully softened to avoid lumps.

How to Make It

Step 1: Prep and Sift

Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans to ensure a clean release later. In a medium bowl, sift together the all-purpose flour, cake flour, baking soda, salt, and 4 teaspoons of powdered green tea. Sifting is vital here to break up any clumps in the tea powder.

Step 2: Mix the Wet Ingredients

In a large mixing bowl, beat together the white sugar, vegetable oil, and eggs until the mixture is smooth and uniform. Stir in 1 ½ teaspoons of vanilla extract.

Step 3: Create the Batter

Add the flour mixture to the wet ingredients alternately with the plain yogurt. Begin and end with the flour mixture. Mix just until the flour is incorporated; overmixing can make the cake tough.

Step 4: Bake

Pour the batter evenly into your prepared pans. Bake in the preheated oven for 30 to 40 minutes. A toothpick inserted into the center should come out clean. Let the cakes cool in the pans for 30 minutes before turning them out onto a wire rack to cool completely.

Step 5: Make the Frosting

While the cakes cool, sift together the confectioners’ sugar and the remaining 2 teaspoons of green tea powder. In a medium bowl, beat the softened butter, cream cheese, ½ teaspoon vanilla, and milk until smooth. Gradually add the sugar-tea mixture and beat until creamy.

Step 6: Assemble

Once the cakes are completely cool, place one layer on a serving plate. Spread a thin layer of frosting over it. Place the second layer on top and cover the top and sides with the remaining frosting. Dust with a little extra green tea powder for a professional finish.

Jesse’s Secrets for Success

Sifting green tea powder into a bowl to remove clumps
Green Cake 17
  • Sift Your Tea: Green tea powder loves to clump. Always sift it with your sugar or flour to ensure you don’t bite into a bitter pocket of powder. It ensures that smooth, consistent color throughout the batter.
  • Room Temperature Matters: For the smoothest frosting, your cream cheese and butter must be truly soft. If they are cold, you will end up with tiny lumps that no amount of beating can fix.
  • Watch the Clock: Green tea cakes can brown quickly on the outside. Check them at the 30-minute mark. If the top is browning too fast but the center isn’t done, tent a piece of foil over the top.

Make It Your Own

  • Adzuki Bean Twist: As noted in the recipe, you can fold in 1 cup of cooked, sweetened adzuki beans (red beans) into the batter before baking. This is a classic pairing in Asian desserts and adds a lovely texture.
  • Cupcakes: This batter works wonderfully for cupcakes. Reduce the baking time to 18–22 minutes and check for doneness early.
  • White Chocolate Drizzle: If you want a bit more sweetness to contrast the tea, melt some white chocolate and drizzle it over the frosted cake.

At the Table

This cake shines when served with a hot beverage. The earthy notes pair beautifully with a cup of jasmine tea or a strong black coffee to cut through the sweetness of the frosting. For a summer gathering, serve thin slices with a dollop of unsweetened whipped cream on the side.

If you prefer a classic contrast to this unique flavor, you can always bake our yellow cake with chocolate frosting for a traditional option alongside this one.

The Final Slice

I hope this Green Cake brings a touch of color and joy to your kitchen. It is a wonderful reminder that baking is an adventure, and sometimes the most memorable treats are the ones that step outside the box. The combination of moist crumb and aromatic tea is truly something special.
