Description

Ingredients

  • 1 cup all-purpose flour
  • 1 cup cake flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 teaspoons powdered green tea (matcha), plus extra for dusting
  • 1 1/2 cups white sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 cup plain yogurt
  • 4 cups confectioners’ sugar
  • 2 teaspoons powdered green tea (for frosting)
  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons milk


Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
  2. In a medium bowl, sift together the all-purpose flour, cake flour, baking soda, salt, and 4 teaspoons of matcha powder.
  3. In a separate large mixing bowl, beat together the white sugar, vegetable oil, and eggs until smooth, then stir in 1 1/2 teaspoons of vanilla extract.
  4. Add the dry flour mixture to the wet ingredients alternately with the plain yogurt, beginning and ending with the flour mixture, mixing only until just incorporated.
  5. Pour the batter evenly into the prepared pans and bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 30 minutes before transferring them to a wire rack to cool completely.
  7. Prepare the frosting by sifting the confectioners’ sugar and 2 teaspoons of matcha together, then beat the softened butter, cream cheese, vanilla, and milk in a bowl until smooth.
  8. Gradually add the sugar-tea mixture to the cream cheese base and beat until creamy, then frost the cooled cake layers and finish with a light dusting of matcha.

Notes

To ensure the most vibrant green color, store your matcha powder in a cool, dark place as light and heat can cause the powder to oxidize and turn brown. If the cake layers feel too soft to frost, try chilling them in the refrigerator for 20 minutes to firm up the crumb before assembling.
