Ingredients

  • 2 cups granulated white sugar

  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans with oil and a dusting of cocoa powder.
  2. In a large mixing bowl, whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt until the mixture is uniform and free of lumps.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients and beat with an electric mixer on medium speed for 2 minutes.
  4. Reduce the mixer to low speed and carefully stir in the boiling water until the batter is smooth and well combined; the batter will be thin.
