Description

Ingredients

  • 4 large eggs
  • 1.5 cups granulated sugar
  • 2 teaspoons vanilla sugar
  • 7 fluid ounces sunflower seed oil
  • 6.5 fluid ounces orange soda
  • 2.75 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 pinch salt
  • Confectioners’ sugar
  • Lemon juice
  • Food coloring
  • Candy-coated milk chocolate pieces


Instructions

  1. Preheat oven to 350°F (175°C) and line a 13×18 inch rimmed baking sheet with professional-grade parchment paper.
  2. In a large bowl, beat the eggs, granulated sugar, and vanilla sugar on medium-high speed for 4 minutes until the mixture reaches a pale, thick ribbon stage.
  3. Reduce mixer speed to low and slowly pour in the sunflower oil and orange soda, mixing until just combined to preserve carbonation.
  4. Sift the flour, baking powder, and salt directly over the wet mixture and gently fold with a silicone spatula until no dry streaks remain.
  5. Pour the batter onto the prepared baking sheet, level with an offset spatula, and bake for approximately 30 minutes until a toothpick comes out clean.
  6. Cool the cake in the pan for 20 minutes before transferring to a wire rack to reach full room temperature.
  7. Using a ruler and a sharp serrated knife, cut the cake into precise 1.5 by 3 inch rectangles, chilling the cake briefly if the crumb is too soft for clean edges.
  8. Whisk confectioners’ sugar and lemon juice into a thick glaze, tint with food coloring, brush onto the bricks, and press eight chocolate pieces into two parallel rows of four.
