Description
Create a stunning ocean-themed centerpiece featuring tender buttermilk layers filled with sweet strawberry jam. This Moana cake uses blue-tinted buttercream waves and crushed biscuit sand to bring an island paradise to your dessert table.
Ingredients
- 3 batches of buttermilk cake batter (for 3 rectangular layers)
- High-quality strawberry jam
- Vanilla buttercream icing
- Blue gel food coloring
- Crushed Granita or Digestive biscuits
- Chocolate fingers
- Moana cake toppers and toy sea animals
Instructions
- Secure the cake base by placing five blobs of buttercream on a large cake board and firmly pressing the first rectangular cake layer onto them.
- Spread a generous layer of strawberry jam over the first layer, leaving a 1cm border, and then top with a layer of buttercream.
- Stack the second cake layer on top, repeat the jam and buttercream filling, and then place the final cake layer.
- Apply a thin crumb coat of buttercream over the top and sides of the entire cake to seal in crumbs, then refrigerate for 30 minutes.
- Tint two-thirds of the remaining buttercream blue with gel coloring and spread over the cake in swirling waves, leaving one section white for the beach area.
- Press crushed biscuits into the white buttercream section to create sand and arrange the toppers and chocolate fingers to complete the scene.
Notes
To ensure a perfectly stable cake, trim the tops of your buttermilk layers to be completely flat before stacking. If the frosting begins to melt or lose its shape while decorating the waves, place the cake back in the refrigerator for 10 to 15 minutes to firm up.
