Description

A stunning yet simple farmhouse-style layer cake that features a beautiful color gradient and a tender crumb enriched with coconut milk. Topped with zesty frosting and fresh blueberries, it is the perfect centerpiece for any rustic gathering.


Ingredients

  • 200g softened butter
  • 200g sugar
  • 6 large farm-fresh eggs
  • 425g all-purpose flour
  • 10g baking powder
  • 20cl full-fat coconut milk
  • Yellow and blue food coloring
  • 200g softened butter (for frosting)
  • 200g powdered sugar
  • Coconut extract
  • Lemon zest
  • 1-2 baskets fresh blueberries
  • Edible flowers for garnish


Instructions

  1. Preheat your oven and grease your cake pans thoroughly.
  2. In a large bowl, cream 200g softened butter with 200g sugar until light and fluffy, then beat in the eggs one at a time.
  3. Sift together the flour and baking powder, then gradually fold into the butter mixture while alternating with the coconut milk.
  4. Divide the batter into three or four separate bowls and add food coloring to create varying shades for the ombre effect.
  5. Pour into prepared pans and bake until a toothpick inserted in the center comes out clean, then cool completely on a wire rack.
  6. Prepare the frosting by beating the remaining butter and powdered sugar with coconut extract and lemon zest until smooth.
  7. Stack the cooled layers from darkest to lightest with frosting in between, then cover the exterior and decorate with fresh blueberries and flowers.

Notes

To achieve a perfectly smooth frosting, sift your powdered sugar before mixing to remove any lumps. If you are baking in a warm kitchen, chill the cake layers for 30 minutes before assembling to prevent the frosting from sliding.
