Description

Ingredients
- 200g softened butter
- 200g sugar
- 6 large farm-fresh eggs
- 425g all-purpose flour
- 10g baking powder
- 20cl full-fat coconut milk
- Yellow and blue food coloring
- 200g softened butter (for frosting)
- 200g powdered sugar
- Coconut extract
- Lemon zest
- 1-2 baskets fresh blueberries
- Edible flowers for garnish
Instructions
- Preheat your oven and grease your cake pans thoroughly.
- In a large bowl, cream 200g softened butter with 200g sugar until light and fluffy, then beat in the eggs one at a time.
- Sift together the flour and baking powder, then gradually fold into the butter mixture while alternating with the coconut milk.
- Divide the batter into three or four separate bowls and add food coloring to create varying shades for the ombre effect.
- Pour into prepared pans and bake until a toothpick inserted in the center comes out clean, then cool completely on a wire rack.
- Prepare the frosting by beating the remaining butter and powdered sugar with coconut extract and lemon zest until smooth.
- Stack the cooled layers from darkest to lightest with frosting in between, then cover the exterior and decorate with fresh blueberries and flowers.
Notes
To achieve a perfectly smooth frosting, sift your powdered sugar before mixing to remove any lumps. If you are baking in a warm kitchen, chill the cake layers for 30 minutes before assembling to prevent the frosting from sliding.
