Description

Ingredients

  • 2 ¾ cups cake flour, sifted
  • 1 cup unsalted butter, room temperature
  • 1 package (3 oz) strawberry gelatin
  • 4 large eggs, room temperature
  • ½ cup strawberry puree
  • 1 cup whole milk, room temperature
  • 2 ½ teaspoons baking powder
  • 2 cups white sugar
  • 1 tablespoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Sift the cake flour and baking powder together in a medium bowl and set aside.
  3. In a large bowl, cream the softened butter, white sugar, and dry strawberry gelatin together on medium-high speed until the mixture is light and fluffy.
  4. Add the room-temperature eggs one at a time, beating well after each addition and scraping down the sides of the bowl.
  5. Reduce mixer speed to low and alternate adding the flour mixture and milk in three parts, beginning and ending with the flour.
  6. Gently fold in the strawberry puree and vanilla extract until the batter is a uniform pink color.
  7. Divide the batter evenly between the prepared pans and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pans for 10 minutes before inverting onto a wire rack to cool completely.

Notes

To ensure a perfect rise, verify that your baking powder is fresh and that your eggs and milk are truly at room temperature before starting. If you are using frozen strawberries for the puree, ensure they are fully thawed and slightly drained to avoid adding excess moisture to the batter.
