Ingredients

  • 1 box Strawberry Cake Mix (Super Moist recommended)
  • 2 boxes Strawberry Gelatin (divided)
  • 1 cup Water
  • 6 tablespoons Melted Butter
  • 1 tablespoon Pure Vanilla Extract (for cake)
  • 3 Large Eggs (room temperature)
  • 1 package Golden Oreos
  • 2 tablespoons Melted Butter (for topping)
  • 2 sticks Butter (softened, for frosting)
  • 4-5 cups Powdered Sugar
  • 1 tablespoon Pure Vanilla Extract (for frosting)
  • Pinch of salt
  • Whole Milk (added by tablespoon for consistency)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans or a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the strawberry cake mix, one box of strawberry gelatin, water, 6 tablespoons of melted butter, 1 tablespoon of vanilla extract, and three eggs; beat on medium speed for two minutes.
  3. Divide the batter into the prepared pans and bake for 25 to 30 minutes, then allow them to cool in the pans for 10 minutes before moving to a wire rack to cool completely.
  4. Prepare the crunch topping by crushing Golden Oreos in a sealed bag and tossing the crumbs with 2 tablespoons of melted butter and half of the second box of strawberry gelatin.
  5. Make the frosting by beating two sticks of softened butter until creamy, then gradually adding powdered sugar, 1 tablespoon vanilla, a pinch of salt, and the remaining strawberry gelatin.
  6. Incorporate whole milk into the frosting one tablespoon at a time until fluffy, then frost the cooled cake layers and press the strawberry crunch mixture into the top and sides.

Notes

To ensure the best texture, always use room temperature eggs and whole milk to help the fats emulsify properly in the batter and frosting. If you find the crunch topping is losing its snap, a quick five-minute toast in a low-temperature oven will restore that perfect crispness before assembly.
