Description

This rustic apple cider cake features a tender, moist crumb infused with warm autumnal spices and a rich, concentrated cider glaze. Finished with a crunchy cinnamon-sugar coating, it is the perfect comforting centerpiece for any harvest-time gathering.

Ingredients

  • 1 cup apple cider concentrate
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1 cup unsalted butter, softened
  • 1 cup dark brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1/2 cup full-fat Greek yogurt
  • 2 tablespoons additional unsalted butter, melted (for glaze)
  • 1/4 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Prep the pan. Heat oven to 350°F and coat a ten-cup bundt pan with softened butter and a light dusting of granulated sugar.
  2. Whisk dry ingredients. In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon, allspice, nutmeg, and ginger.
  3. Cream butter sugars. Beat softened butter, dark brown sugar, and granulated sugar until the mixture is pale, fluffy, and smooth.
  4. Incorporate eggs. Add room-temperature eggs one at a time, followed by the vanilla extract, beating until the batter is light and emulsified.
  5. Mix the batter. Alternate adding the dry mixture and the cider, applesauce, and yogurt, mixing until just combined before pouring into the prepared pan.
  6. Bake the cake. Bake for 35 to 42 minutes until a toothpick inserted into the center comes out clean.
  7. Release and cool. Let the cake rest in the pan for 10 minutes before inverting onto a wire rack to cool completely.
  8. Glaze the cake. Brush the warm cake with a mixture of melted butter and remaining cider concentrate, then dust thoroughly with cinnamon sugar.

Notes

  • Ensure all dairy and eggs are at room temperature to prevent the batter from breaking during the mixing process.
  • Use a digital scale to weigh your flour rather than using measuring cups to ensure a light, tender crumb.
  • Reduce the apple cider slowly on the stovetop to concentrate the sugars and flavor, which provides a deeper intensity than store-bought juice.
  • If the cake resists unmolding, wrap the inverted pan in a hot, damp towel for five minutes to loosen the caramelized exterior.
