Ingredients
- 1 cup apple cider concentrate
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1 tablespoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground allspice
- 1 cup unsalted butter, softened
- 1 cup dark brown sugar
- 1/2 cup granulated sugar
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened applesauce
- 1/2 cup full-fat Greek yogurt
- 2 tablespoons additional unsalted butter, melted (for glaze)
- 1/4 cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)
Instructions
- Prep the pan. Heat oven to 350°F and coat a ten-cup bundt pan with softened butter and a light dusting of granulated sugar.
- Whisk dry ingredients. In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon, allspice, nutmeg, and ginger.
- Cream butter sugars. Beat softened butter, dark brown sugar, and granulated sugar until the mixture is pale, fluffy, and smooth.
- Incorporate eggs. Add room-temperature eggs one at a time, followed by the vanilla extract, beating until the batter is light and emulsified.
- Mix the batter. Alternate adding the dry mixture and the cider, applesauce, and yogurt, mixing until just combined before pouring into the prepared pan.
- Bake the cake. Bake for 35 to 42 minutes until a toothpick inserted into the center comes out clean.
- Release and cool. Let the cake rest in the pan for 10 minutes before inverting onto a wire rack to cool completely.
- Glaze the cake. Brush the warm cake with a mixture of melted butter and remaining cider concentrate, then dust thoroughly with cinnamon sugar.
Notes
- Ensure all dairy and eggs are at room temperature to prevent the batter from breaking during the mixing process.
- Use a digital scale to weigh your flour rather than using measuring cups to ensure a light, tender crumb.
- Reduce the apple cider slowly on the stovetop to concentrate the sugars and flavor, which provides a deeper intensity than store-bought juice.
- If the cake resists unmolding, wrap the inverted pan in a hot, damp towel for five minutes to loosen the caramelized exterior.
