Ingredients

  • 2 cups shredded red baking apples
  • 2 1/4 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 1/4 cups light brown sugar
  • 3 large eggs
  • 3/4 cup vegetable oil
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter
  • 8 ounces brick-style cream cheese
  • 4 cups powdered sugar
  • 1 tablespoon fresh lemon juice


Instructions

  1. Preheat and prep. Preheat oven to 180°C (350°F) and coat two 8-inch cake tins with baking spray or release paste.
  2. Sift dry ingredients. Whisk and sift together flour, cornstarch, baking powder, baking soda, salt, and spices in a large bowl.
  3. Prepare the apples. Grate peeled apples finely to reach two cups, pressing lightly into the measuring cup without squeezing out excess juice.
  4. Mix wet ingredients. Whisk brown sugar, eggs, oil, milk, vanilla, and shredded apples in a separate bowl until smooth and emulsified.
  5. Fold and bake. Gently fold dry ingredients into the wet mixture, divide into pans, and bake for 30-33 minutes until a toothpick comes out clean.
  6. Cool the layers. Let the cakes rest in tins for 20 minutes before inverting onto a wire rack to cool completely.
  7. Cook apple filling. Simmer shredded apple, sugar, water, cornstarch, cinnamon, lemon juice, and butter in a saucepan until thickened, then cool.
  8. Whip the frosting. Beat butter until fluffy, gradually add powdered sugar, then incorporate cold cream cheese, vanilla, lemon juice, and cinnamon.
  9. Assemble the cake. Spread buttercream on the base layer, pipe a dam border, add cooled apple filling, top with second layer, and frost the exterior.
