Description

This refreshing, no-bake fruit cake uses a watermelon core and a creamy yogurt-based frosting to create a visually stunning and wholesome dessert. Perfect for first birthdays or hot summer gatherings, this nutrient-dense treat is both allergen-friendly and beautifully festive.


Ingredients

  • 1 large seedless watermelon
  • 8 oz whipped topping (Cool Whip)
  • 1 cup Greek yogurt
  • 2 tablespoons instant vanilla or white chocolate pudding mix
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, halved
  • 2 kiwis, thinly sliced


Instructions

  1. Slice the watermelon. Remove the rind and pith from the watermelon, then cut the center into three thick rounds measuring approximately two inches high.
  2. Shape the tiers. Use circular guides or plates to trim the watermelon slices into uniform rounds of nine, six, and four inches in diameter.
  3. Drain the fruit. Place the watermelon tiers on a rimmed baking sheet lined with paper towels, covering the tops with more towels to draw out excess moisture for several hours or overnight.
  4. Prepare the frosting. Combine the whipped topping, Greek yogurt, and instant pudding mix in a bowl, whipping for two minutes until the mixture is thick and stable.
  5. Assemble the cake. Stack the watermelon tiers from largest to smallest on a serving platter, applying a thin layer of frosting between each layer to help them bond.
  6. Decorate the exterior. Spread the remaining frosting over the sides of the tiers and press the berries and kiwi slices into the surface to create a decorative finish.
