Description
This effortless banana bread transforms pantry staples and overripe fruit into a moist, rustic loaf. Perfect for busy mornings, it delivers the comforting aroma of home baking with minimal preparation.
Ingredients
- 1 box yellow cake mix
- 3-4 very ripe bananas, mashed
- 2 large eggs
- 1/2 cup butter, melted
- 1 teaspoon ground cinnamon
Instructions
- Prepare oven and pan. Heat oven to 350°F and grease a standard loaf pan thoroughly with butter.
- Mash the bananas. Peel bananas and mash in a large bowl with a fork until mostly smooth but slightly textured.
- Combine wet ingredients. Stir in the melted butter and eggs until the mixture is uniform and pale.
- Add dry ingredients. Fold in the cake mix and cinnamon until just incorporated, being careful not to overmix.
- Transfer to pan. Scrape batter into the prepared loaf pan and smooth the top surface with a spatula.
- Bake and cool. Bake for 45 to 50 minutes until a toothpick comes out clean, then let cool in the pan for ten minutes before serving.
Notes
- Use bananas with plenty of brown spots for the best natural sweetness and moisture.
- Do not overmix the batter once the dry ingredients are added to ensure a soft, tender crumb.
- Monitor the loaf during the final minutes of baking and tent with foil if the top browns too quickly.
- Measure mashed bananas by volume rather than fruit count to maintain the perfect moisture balance.
