Ingredients

  • 1 box yellow cake mix
  • 3-4 very ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon ground cinnamon


Instructions

  1. Prepare oven and pan. Heat oven to 350°F and grease a standard loaf pan thoroughly with butter.
  2. Mash the bananas. Peel bananas and mash in a large bowl with a fork until mostly smooth but slightly textured.
  3. Combine wet ingredients. Stir in the melted butter and eggs until the mixture is uniform and pale.
  4. Add dry ingredients. Fold in the cake mix and cinnamon until just incorporated, being careful not to overmix.
  5. Transfer to pan. Scrape batter into the prepared loaf pan and smooth the top surface with a spatula.
  6. Bake and cool. Bake for 45 to 50 minutes until a toothpick comes out clean, then let cool in the pan for ten minutes before serving.
