Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 2 large eggs
- 1/2 cup vegetable oil
- 1/4 cup honey
- 1 cup grated zucchini
- 1 cup grated carrot
- 1 cup finely chopped apple
- 1/2 cup chopped pecans
Instructions
- Preheat your oven and grease a standard loaf pan.
- In a large bowl, whisk together the flour, salt, baking soda, baking powder, sugar, cinnamon, cloves, and nutmeg.
- In a separate bowl, whisk the eggs and oil until smooth, then stir in the honey.
- Combine the wet and dry ingredients, stirring just until a batter forms.
- Gently fold in the grated zucchini, carrots, apples, and pecans.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake until a skewer inserted into the center comes out clean, then allow to cool before slicing.
Notes
Ensure you lightly squeeze excess moisture from the grated zucchini to prevent the bread from becoming too dense. For an enhanced flavor profile, lightly toast the pecans in a dry skillet before adding them to the batter to bring out their natural nuttiness.
