Description

Ingredients

  • 2 1/2 cups unbleached cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup whole milk, room temperature
  • 2 tablespoons vegetable oil
  • 16 ounces mascarpone cheese
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups heavy whipping cream
  • 1/4 cup berry jam
  • 1 tablespoon water
  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup fresh raspberries
  • 1 cup fresh blueberries
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest


Instructions

  1. Prepare the pans. Preheat the oven to 350°F and grease two 9-inch round cake pans, lining the bottoms with parchment paper.
  2. Sift dry ingredients. Whisk together the cake flour, baking powder, and salt in a large bowl, then set aside.
  3. Cream butter and sugar. Beat the butter and sugar in a stand mixer for 4 minutes until pale and fluffy, then add eggs and vanilla.
  4. Combine the batter. Incorporate the flour mixture alternately with the milk and oil, mixing until smooth, then divide into pans.
  5. Bake and cool. Bake for 40 to 45 minutes until a toothpick comes out clean, then cool in pans for 20 minutes before transferring to a wire rack.
  6. Macerate the berries. Combine the jam and water, then toss with the sliced strawberries, raspberries, blueberries, lemon juice, and zest.
  7. Whip the frosting. Beat the mascarpone, cream cheese, and powdered sugar until smooth, then fold in the whipped heavy cream and vanilla.
  8. Assemble the cake. Slice cakes into four layers, spreading jam, cream, and fruit between each, then frost the top and sides before chilling for two hours.

Ensure your dairy ingredients reach room temperature before starting to avoid a lumpy frosting texture. For the cleanest slices, chill the cake thoroughly and use a sharp knife that you briefly dip into warm water and wipe clean between each cut.
