Description

Experience the joy of the county fair at home with this crisp, cocoa-rich funnel cake. This simple, hand-mixed batter fries into golden, airy loops that are perfect for dusting with powdered sugar and sharing with family.

Ingredients

  • 1 large farm-fresh egg
  • 1/4 cup granulated sugar
  • 3/4 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup Dutch-process cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt
  • Neutral frying oil (e.g., canola or sunflower)

Instructions

  1. Whisk egg and sugar. In a large bowl, whisk the egg and sugar together until the mixture is pale and slightly thickened.
  2. Add wet ingredients. Stir in the cold whole milk and pure vanilla extract until the mixture is uniform and smooth.
  3. Sift dry ingredients. Sift the flour, Dutch cocoa, baking powder, and salt into the wet mixture, then stir gently until just combined.
  4. Heat the oil. Pour oil into a heavy pot to a depth of 1.5 inches and heat slowly until it reaches 360°F.
  5. Prepare the batter. Transfer the chocolate batter into a squeeze bottle or funnel, whisking in a little extra milk if the consistency is too thick.
  6. Pour and fry. Squeeze the batter into the hot oil in overlapping circular motions and fry for two minutes until the bottom crust is firm.
  7. Flip and drain. Flip the cake carefully using long chopsticks or tongs, fry for an additional 90 seconds, then drain on a wire rack lined with paper towels.

Notes

  • Always bring your refrigerated ingredients to room temperature for twenty minutes before mixing to ensure a proper rise.
  • Use a thermometer to maintain a steady oil temperature of 360°F to prevent the cake from becoming greasy or burnt.
  • Sift your cocoa powder thoroughly before mixing to remove stubborn clumps and ensure a velvety, smooth batter.
  • Keep your squeeze bottle tip about two inches above the oil to avoid messy splattering and ensure continuous, connected loops.
