Description

These golden, crispy funnel cake fries bring the nostalgic taste of the fair directly to your kitchen. With a tender, pillowy interior and a generous dusting of cinnamon sugar, they are the perfect shareable treat for any weekend gathering.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon fine sea salt
  • 2 large eggs
  • 1/2 cup granulated sugar, plus extra for coating
  • 1/2 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon ground cinnamon
  • 3 cups vegetable or canola oil for frying

Instructions

  1. Prepare spice mixture. Whisk together the granulated sugar and ground cinnamon in a shallow dish and set aside near your frying station.
  2. Combine dry ingredients. In a large mixing bowl, whisk together the flour, baking powder, and sea salt until thoroughly combined.
  3. Whisk wet ingredients. In a separate bowl, beat the eggs, sugar, milk, and vanilla extract until the mixture is pale and slightly frothy.
  4. Create the batter. Gently fold the wet ingredients into the dry ingredients until smooth, taking care not to overmix the batter.
  5. Heat the oil. Heat the oil in a medium saucepan to exactly 350°F while monitoring with a deep-fry thermometer.
  6. Pipe the fries. Using a squeeze bottle or piping bag, pipe 4-inch lines of batter into the hot oil, frying in small batches.
  7. Fry and coat. Fry until golden brown, drain briefly on paper towels, then immediately toss in the prepared cinnamon sugar mixture before serving.

Notes

  • Ensure the oil returns to 350°F between each batch to prevent the fries from absorbing excess oil.
  • Let the batter rest for 10 minutes before frying to allow the gluten to relax for a lighter texture.
  • Use a squeeze bottle with at least a quarter-inch opening for the best fry shape.
  • Always toss the fries in the cinnamon sugar while they are still hot so the coating sticks properly.
  • Spoon and level your flour measurements to avoid packing the cup and creating dense fries.
