This classic coffee cake features a rich, cream-cheese-infused batter swirled with a cinnamon sugar ribbon. It is finished with a generous, buttery crumb topping for a tender and comforting treat perfect for any gathering.

Ingredients

  • 8 ounces cream cheese, softened
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 cup light brown sugar, packed
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 tablespoons ground cinnamon (for filling)
  • 1/2 cup granulated sugar (for filling)
  • 1 cup all-purpose flour (for topping)
  • 1/2 cup light brown sugar (for topping)
  • 1/2 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)
  • 1/4 teaspoon salt (for topping)
  • 6 tablespoons unsalted butter, melted (for topping)

Instructions

  1. Preheat and prep. Preheat your oven to 350°F and grease a 9×13-inch baking pan, lightly dusting with flour.
  2. Cream butter and cheese. Beat the softened butter and cream cheese in a stand mixer on medium speed for three minutes until smooth.
  3. Incorporate sugars. Add the light brown and granulated sugars, beating for three to four minutes until the mixture is light and fluffy.
  4. Add wet ingredients. Beat in the eggs one at a time, then scrape the bowl and stir in the vanilla extract.
  5. Whisk dry ingredients. In a separate bowl, whisk together the flour, baking powder, cornstarch, and salt.
  6. Combine batter. Alternately add the dry mixture and buttermilk to the creamed ingredients, mixing on low speed until just combined.
  7. Assemble the layers. Spread half the batter in the pan, sprinkle with the cinnamon-sugar filling, then dollop and spread the remaining batter over the top.
  8. Mix crumble topping. Combine the topping ingredients with melted butter using a fork to create pea-sized crumbs, then sprinkle evenly over the cake.
  9. Bake the cake. Bake for 40 to 50 minutes until a toothpick inserted in the center comes out clean, then cool completely on a wire rack.

Notes

  • Use brick-style cream cheese for the best structural integrity of the cake batter.
  • Ensure all cold ingredients are at room temperature to achieve a uniform and light emulsion.
  • Measure flour by spooning it into the measuring cup rather than scooping to avoid a dense texture.
  • Allow melted butter to cool slightly before mixing into the streusel to maintain distinct, crunchy crumbs.
  • Avoid overmixing the batter once the flour is added to ensure the cake remains tender instead of tough.
