Description

Ingredients

  • Baking powder
  • Salt
  • Granulated sugar
  • Eggs, separated

  • Mascarpone cheese

  • Strong espresso or dark roast coffee
  • Dark rum or brandy (optional)


Instructions

  1. Prep the oven. Heat your oven to 340 degrees Fahrenheit and prepare an eight-inch springform pan with grease and flour.
  2. Sift dry ingredients. Combine cake flour, salt, and baking powder, sifting the mixture twice to ensure aeration.
  3. Whip egg whites. Beat the room-temperature egg whites on medium-high speed until they reach stiff, glossy peaks.
  4. Beat yolks and sugar. Combine egg yolks and sugar, beating for fifteen minutes until the mixture turns pale and thick.
  5. Fold the batter. Mix in vanilla and flour alternate with hot water, then gently fold in the whipped egg whites.
  6. Bake the sponge. Spread batter into the pan and bake for 30 to 40 minutes, cooling completely before assembly.
  7. Prepare coffee soak. Brew strong espresso and allow it to cool, stirring in optional rum or brandy.
  8. Whip mascarpone cream. Combine mascarpone, sugar, egg, and cream, beating until thick and spreadable.
  9. Assemble and chill. Slice the cake into three layers, soaking each with coffee and spreading filling between and over the top.
