Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup natural cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup vegetable oil
- 2 large eggs
- 1 cup full-fat sour cream
- 1/2 cup buttermilk
- 1 tablespoon vanilla extract
- 1 cup hot coffee
- 1 cup chocolate chips
- 1 cup softened butter
- 1 cup creamy peanut butter
- 3 cups powdered sugar
- 1/4 cup heavy cream
- 1/2 cup chopped chocolate
Instructions
- Prep pans and oven. Preheat your oven to 350°F (177°C) and grease three 9-inch cake pans, lining them with parchment paper.
- Mix dry ingredients. Whisk the flour, cocoa powder, sugar, baking soda, baking powder, and salt together in a large mixing bowl.
- Combine wet ingredients. Using a mixer, blend the oil, eggs, and sour cream until smooth, then add the buttermilk and vanilla.
- Create cake batter. Slowly pour the wet ingredients into the dry, mix in the hot coffee, and fold in the chocolate chips.
- Bake and cool. Divide the batter into the three prepared pans, bake for 24-26 minutes, and cool completely on a wire rack.
- Whip peanut frosting. Beat the softened butter with peanut butter, then gradually incorporate the powdered sugar and heavy cream until fluffy.
- Assemble the layers. Stack the cake layers with a generous layer of peanut butter frosting between each and apply a thin crumb coat to the outside.
- Finish with ganache. Pour warm heavy cream over chopped chocolate, stir until smooth, and drizzle over the chilled cake for a rustic finish.
Notes
For the best results, ensure all dairy and egg components are at room temperature before you begin mixing. Using high-quality chocolate for your ganache provides a superior glossy finish compared to standard chocolate chips. If you need to make the cake ahead of time, store it in an airtight container in the refrigerator and bring to room temperature before serving to ensure the frosting texture remains soft and creamy.
