Description

Ingredients
- 3 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 teaspoon salt
- 1 teaspoon baking soda

- 1/2 teaspoon ground nutmeg
- 1 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon peach extract
- 3 cups fresh peaches, chopped
- 1 cup powdered sugar (optional glaze)
- 2 tablespoons milk (optional glaze)
Instructions
- Preheat the oven. Heat your oven to 350°F (175°C) and grease two 9×5-inch loaf pans with cooking spray or butter and flour.
- Combine dry ingredients. Whisk together the flour, granulated sugar, brown sugar, salt, baking soda, cinnamon, cloves, and nutmeg in a large bowl.
- Mix wet ingredients. Create a well in the center of the dry ingredients, add the oil and eggs, and stir until moistened; stir in the vanilla and peach extracts.
- Fold in peaches. Gently fold the chopped peaches into the batter using a spatula, being careful not to overmix.
- Bake the loaves. Divide the batter between the prepared pans and bake for 50 to 60 minutes until a tester comes out clean.
- Cool and serve. Allow the bread to cool in the pans for 15 minutes before transferring to a wire rack to cool completely; drizzle with glaze if desired.
Notes
To ensure your bread has the best texture, use room temperature eggs and avoid over-mixing the batter once the flour is added. If you notice your peach chunks are very heavy or juicy, lightly toss them in a small amount of extra flour before adding them to the batter to prevent them from sinking to the bottom of the pan.
