Description

This traditional Southern quick bread features a moist, spiced crumb packed with juicy fresh peach chunks. It is a perfect seasonal treat that stays wonderfully fresh for days, making it ideal for sharing with friends and neighbors.


Ingredients

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peach extract
  • 3 cups fresh peaches, chopped
  • 1 cup powdered sugar (optional glaze)
  • 2 tablespoons milk (optional glaze)


Instructions

  1. Preheat the oven. Heat your oven to 350°F (175°C) and grease two 9×5-inch loaf pans with cooking spray or butter and flour.
  2. Combine dry ingredients. Whisk together the flour, granulated sugar, brown sugar, salt, baking soda, cinnamon, cloves, and nutmeg in a large bowl.
  3. Mix wet ingredients. Create a well in the center of the dry ingredients, add the oil and eggs, and stir until moistened; stir in the vanilla and peach extracts.
  4. Fold in peaches. Gently fold the chopped peaches into the batter using a spatula, being careful not to overmix.
  5. Bake the loaves. Divide the batter between the prepared pans and bake for 50 to 60 minutes until a tester comes out clean.
  6. Cool and serve. Allow the bread to cool in the pans for 15 minutes before transferring to a wire rack to cool completely; drizzle with glaze if desired.

Notes

To ensure your bread has the best texture, use room temperature eggs and avoid over-mixing the batter once the flour is added. If you notice your peach chunks are very heavy or juicy, lightly toss them in a small amount of extra flour before adding them to the batter to prevent them from sinking to the bottom of the pan.
