Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup high-quality peach preserves
  • 8 oz full-fat block cream cheese, softened
  • 2 cups powdered sugar
  • 1 tbsp milk
  • 2 fresh ripe peaches, diced
  • Wildflower honey, for drizzling
  • Sugar crystals, for garnish


Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper or parchment liners.
  2. In a medium-sized mixing bowl, whisk together the flour, baking powder, baking soda, and salt until evenly combined.
  3. In a separate large bowl, beat the softened butter and granulated sugar with an electric mixer for 3 to 5 minutes until light and fluffy.
  4. Incorporate the eggs one at a time, beating thoroughly after each addition, then stir in the vanilla extract.
  5. Alternately add the dry mixture and buttermilk to the butter mixture, starting and ending with the dry ingredients, and mix until just combined.
  6. Spoon the batter into the liners until halfway full, place a small dollop of peach preserves in the center of each, and cover with the remaining batter.
  7. Bake for 18-20 minutes or until the tops spring back when touched; let them cool completely on a wire rack.
  8. For the frosting, whip the cream cheese, powdered sugar, and a splash of milk until smooth and velvety.
  9. Pipe the frosting onto the cooled cupcakes and garnish with diced fresh peaches, a drizzle of honey, and a sprinkle of sugar crystals.

Notes

For the best texture, ensure your cream cheese is completely at room temperature before whipping to avoid any lumps in the frosting. If you find your fresh peach toppings are making the frosting too wet, pat the diced pieces dry with a paper towel before assembling the cupcakes.
