Instructions
- Cook mango curd. Whisk mango puree, lemon juice, sugar, eggs, and yolks in a saucepan over medium heat until thickened, then whisk in butter until smooth.
- Chill the curd. Strain the mixture through a fine-mesh sieve, cool over an ice bath, and refrigerate covered with plastic wrap until firm.
- Prepare dry base. Preheat your oven to 325 degrees Fahrenheit and grease a nine-inch round cake pan lined with parchment paper.
