Ingredients

  • 2 cups mango puree
  • 1/4 cup lemon juice
  • 1 cup granulated sugar
  • 3 large whole eggs
  • 4 large egg yolks
  • 1/2 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon fine sea salt
  • 5 large eggs, room temperature
  • 1 cup sour cream
  • 1/4 cup vegetable oil
  • 1 tablespoon vanilla paste
  • 1/4 cup lime soaking syrup
  • 2 cups white chocolate buttercream
  • 1 cup diced fresh mango


Instructions

  1. Cook mango curd. Whisk mango puree, lemon juice, sugar, eggs, and yolks in a saucepan over medium heat until thickened, then whisk in butter until smooth.
  2. Chill the curd. Strain the mixture through a fine-mesh sieve, cool over an ice bath, and refrigerate covered with plastic wrap until firm.
  3. Prepare dry base. Preheat your oven to 325 degrees Fahrenheit and grease a nine-inch round cake pan lined with parchment paper.
  4. Whip egg base. Beat five eggs and sugar in a stand mixer on medium-high speed for eight minutes until thick, pale, and ribbon-like.
  5. Incorporate remaining ingredients. Whisk sour cream, oil, and vanilla; fold into the egg mixture before gently mixing in the sifted flour and baking powder.
  6. Bake the cake. Bake for 75 to 80 minutes until a toothpick inserted in the center comes out clean, then cool completely on a wire rack.
  7. Assemble cake layers. Slice the cake into four even layers, brushing each with lime syrup and filling with buttercream dams and mango curd.
  8. Apply final frosting. Coat the entire cake in a thin crumb coat, chill, and finish with a layer of white chocolate buttercream and diced fresh mango.
