Description

A beautiful, summery layered cake featuring a tender crumb infused with real mango puree, frosted with a light, fluffy mango whipped cream and topped with fresh cubed mangoes.


Ingredients

  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 1 tablespoon white vinegar
  • 1/2 cup mango puree
  • 1 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 2 cups heavy cream
  • 1/4 cup mango puree
  • 2 ripe mangoes, cubed


Instructions

  1. Prep: Preheat your oven to 350°F (180°C) and line two 6-inch pans with parchment paper.
  2. Wet Ingredients: To a bowl, add the milk, vegetable oil, egg, vanilla extract, vinegar, and ½ cup mango puree. Whisk to combine.
  3. Dry Ingredients: In another bowl, sift the flour, baking soda, and salt. Add the sugar and whisk to combine.
  4. Combine: Add the wet ingredients to the dry and whisk until the batter is smooth. Divide the batter into the 2 pans and transfer to the oven.
  5. Bake: Bake for 20-25 minutes or until an inserted toothpick comes out clean. Set the pans aside on the counter to cool for 10 minutes.
  6. Cool: Remove the cakes from the pans and place them on a wire rack to cool completely.
  7. Frosting: Whipping the heavy cream in a bowl until light and fluffy, then fold in ¼ cup of mango puree until incorporated.
  8. Level: Cut the tops of the cakes using a serrated knife so that they are leveled.
  9. Assemble: Place one of the cakes on a plate. Add a layer of the mango cream, about 1 to 1 ½ cup on top. Spread until the edges and smooth. Place the second cake on top, cut side down.
  10. Decorate: Add more cream to the sides and top of the cake. Smooth using a cake spatula evenly. Pipe a decorative border and fill the center with fresh cubed mangoes.
  11. Chill: Transfer the cake to the fridge and allow it to cool completely, 4-8 hours, before slicing and serving.

Notes

  • Make sure your mixing bowl and beaters are thoroughly chilled before whipping the heavy cream to ensure it holds its shape.
  • Use fully ripe mangoes for the sweetest, most intense flavor in both the puree and the garnish.
  • Allow the cake to chill for at least 4 hours before slicing so the layers set cleanly.
