Description

Instructions

  1. Cream the base. Combine softened butter, sugar, baking powder, and vanilla in a bowl and mix until light, pale, and fluffy.
  2. Incorporate eggs. Add eggs one at a time to the butter mixture, then stir in a pinch of salt until smooth and glossy.
  3. Fold in flour. Add flour gradually on low speed, mixing only until no white streaks remain to avoid overworking the dough.
  4. Reduce peach filling. Simmer peaches, butter, and sugar in a heavy-bottomed pot over medium heat for one hour until thickened and syrupy.
  5. Season the filling. Remove the peach mixture from heat and stir in vanilla and a final pinch of salt to brighten the flavors.
  6. Assemble the base. Grease a baking dish and spread most of the dough evenly across the bottom using a spatula.
  7. Layer and top. Spread the hot peach mixture over the dough, dot with the remaining reserved dough, and dust with nutmeg.
  8. Bake the cake. Bake in a preheated 350-degree oven for approximately 34 minutes until the edges are golden and the topping is set.
  9. Glaze and cool. Brush the warm crust with melted butter, drizzle with a whisked powdered sugar and milk glaze, and cool for 30 minutes.
