Description

Celebrate the summer holidays with this festive and tender buttermilk bundt cake featuring stunning swirls of patriotic colors. This simple yet impressive dessert offers a velvety crumb and classic vanilla flavor, making it the perfect centerpiece for any backyard barbecue or farmhouse picnic.


Ingredients

  • 1 cup unsalted butter, softened to room temperature
  • 2 cups granulated sugar
  • 1 tablespoon pure vanilla extract
  • 3 large farm-fresh eggs
  • 2 large egg whites
  • 1 cup buttermilk, room temperature
  • 3 cups cake flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Red and blue food coloring (liquid or gel)


Instructions

  1. Preheat your oven to 350°F (175°C) and thoroughly grease and flour a 12-cup bundt pan, setting it aside for later.
  2. In the bowl of a stand mixer fitted with a paddle attachment, cream together the softened butter and granulated sugar on medium speed until the mixture is light and fluffy.
  3. Add the whole eggs and egg whites one at a time, mixing well after each addition and scraping down the sides of the bowl as needed.
  4. Stir in the pure vanilla extract until the batter is smooth and fragrant.
  5. Pour in the room-temperature buttermilk and mix on low speed until just combined; do not worry if the batter appears slightly curdled at this stage.
  6. Add the cake flour, baking powder, and salt, then mix on the lowest speed until the dry ingredients are just incorporated.
  7. Divide the batter by scooping 1 ½ cups into a separate bowl and another 1 ½ cups into a third bowl, leaving the remaining batter plain in the main mixing bowl.
  8. Stir red food coloring into one of the smaller bowls and blue food coloring into the other until your desired vibrant shades are reached.
  9. Using a 1/4-cup measuring cup, drop alternating scoops of plain, red, and blue batter into the prepared bundt pan until all batter is used.
  10. Gently tap the pan on the counter to level the surface, then bake for 50 to 70 minutes or until a toothpick inserted into the center comes out clean.
  11. Let the cake cool in the pan on a wire rack for exactly 15 minutes before inverting it onto the rack to cool completely.

Notes

For the most successful release from your bundt pan, apply your grease and flour coating immediately before adding the batter to prevent the oil from pooling at the bottom of the intricate designs. To ensure a perfectly light and tender texture, avoid overmixing the batter once the cake flour has been added.
