Description

This rustic autumn loaf features tender, spice-infused cake layers studded with fresh, farm-grown pears. It is a simple, comforting dessert that highlights seasonal orchard fruit with warm notes of ginger, cinnamon, and clove.


Ingredients

  • 2-3 Ripe Bartlett or Bosc pears, sliced
  • 1/2 cup Melted butter
  • 1/4 cup Vegetable oil
  • 3/4 cup Brown sugar
  • 2 Large farm-fresh eggs
  • 1/4 cup Water
  • 1 tsp Vanilla extract
  • 1 1/2 cups All-purpose flour
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 tsp Ground ginger
  • 1/2 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1/4 tsp Ground cloves
  • 1 tbsp Old fashioned oats


Instructions

  1. Prep the pan. Preheat your oven to 350F (175C) and grease a standard 9×5 loaf pan, lining the bottom with parchment paper for easy removal.
  2. Whisk wet ingredients. Combine melted butter, oil, brown sugar, eggs, water, and vanilla in a large bowl, whisking until the mixture is smooth and the sugar is dissolved.
  3. Prepare dry mixture. In a separate medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, nutmeg, and cloves until well combined.
  4. Combine the batter. Gradually incorporate the dry ingredients into the wet mixture in three additions, stirring gently until just combined and velvety.
  5. Arrange the pears. Transfer the batter to the prepared pan, smooth the surface, and press sliced pears upright into the batter in an alternating pattern.
  6. Bake the cake. Sprinkle the top with old-fashioned oats and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Prepare the topping. Whip cold heavy cream with powdered sugar, vanilla, and brandy in a chilled bowl until soft peaks form.
  8. Cool and serve. Allow the cake to rest in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving with the whipped cream.
