Description

This refreshing dessert features a light white cake infused with vibrant, homemade strawberry and blueberry sauces for a beautiful striped effect. Finished with a luscious cream cheese whipped frosting, it is the perfect chilled centerpiece for any summer gathering or farmhouse celebration.


Ingredients

  • 1 box white cake mix (plus required water, oil, and eggs)
  • 1 cup fresh strawberries, divided
  • 1 cup fresh raspberries, divided
  • 1 cup fresh blueberries, divided
  • 1/2 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 packets (0.25 oz each) unflavored gelatin
  • 1/2 cup water, for blooming
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract


Instructions

  1. Bake the white cake in a 9×13-inch pan according to the package directions until golden and a tester comes out clean.
  2. While the cake is still warm, use the handle of a wooden spoon to poke holes across the entire surface about one inch apart.
  3. In two separate small bowls, stir the gelatin into water and let it sit for a few minutes to bloom properly.
  4. Combine most of the strawberries and raspberries with half the sugar and a splash of lemon juice in a pan; simmer until soft, mash to release juices, then stir in one bowl of gelatin and the remaining whole red berries.
  5. Simmer the blueberries with the remaining sugar and lemon juice until they burst, stir in the second bowl of gelatin and the rest of the whole blueberries, then set both sauces aside to cool slightly.
  6. Carefully spoon the red and blue sauces into the cake holes, alternating colors to create a pattern, and chill until the sauces are set.
  7. Beat the softened cream cheese with half the powdered sugar until smooth, then in a separate bowl, whip the heavy cream, vanilla, and remaining powdered sugar to firm peaks.
  8. Fold half of the whipped cream into the cream cheese mixture, spread it over the cake, and garnish with the remaining whipped cream and fresh berries before serving chilled.

Notes

Allowing the berry sauces to cool until they are slightly thickened before pouring ensures they stay in the holes rather than soaking into the cake crumb. For the most distinct red and blue stripes, use a clear glass baking dish so the vibrant fruit layers are visible from the sides.
