Description

This refreshing, no-bake dessert uses a crisp, chilled watermelon round as a base for billowy whipped cream and seasonal summer fruits. It is an honest, healthy treat that celebrates high-summer flavors without the need for an oven.


Ingredients

  • 1 seedless watermelon, center round disk cut 1 to 1.5 inches thick
  • 1 cup heavy whipping cream
  • 1/2 cup vanilla Greek yogurt
  • 1/2 cup full-fat coconut cream (chilled solid portion)
  • 2 tablespoons raw wildflower honey
  • 1 teaspoon powdered sugar
  • 1 cup mixed fresh berries (strawberries, blueberries, blackberries)
  • 1/2 cup pitted sweet cherries, halved
  • 1 ripe peach, thinly sliced


Instructions

  1. Slice the watermelon. Place the watermelon on a cutting board and cut a 1 to 1.5-inch thick round disk from the center, then pat the surface thoroughly dry with a clean linen towel.
  2. Chill the equipment. Place your mixing bowl and beaters in the refrigerator for ten minutes until cold to ensure the cream whips into stable, high peaks.
  3. Whip the cream. Pour the cold heavy cream into the chilled bowl and whip on medium speed, gradually adding the powdered sugar until soft, pillowy peaks form.
  4. Prepare coconut cream. Scoop the solid fat from a chilled can of full-fat coconut milk into a separate chilled bowl and whip until smooth and velvety.
  5. Assemble the base. Spread an even layer of the whipped cream or yogurt over the dry watermelon round, leaving a half-inch border of red fruit and rind visible around the edge.
  6. Garnish with fruit. Arrange the fresh berries, cherries, and peach slices on top of the cream, pressing gently, then drizzle with warm wildflower honey just before serving.
