Description
This refreshing, no-bake dessert uses a crisp, chilled watermelon round as a base for billowy whipped cream and seasonal summer fruits. It is an honest, healthy treat that celebrates high-summer flavors without the need for an oven.
Ingredients
- 1 seedless watermelon, center round disk cut 1 to 1.5 inches thick
- 1 cup heavy whipping cream
- 1/2 cup vanilla Greek yogurt
- 1/2 cup full-fat coconut cream (chilled solid portion)
- 2 tablespoons raw wildflower honey
- 1 teaspoon powdered sugar
- 1 cup mixed fresh berries (strawberries, blueberries, blackberries)
- 1/2 cup pitted sweet cherries, halved
- 1 ripe peach, thinly sliced
Instructions
- Slice the watermelon. Place the watermelon on a cutting board and cut a 1 to 1.5-inch thick round disk from the center, then pat the surface thoroughly dry with a clean linen towel.
- Chill the equipment. Place your mixing bowl and beaters in the refrigerator for ten minutes until cold to ensure the cream whips into stable, high peaks.
- Whip the cream. Pour the cold heavy cream into the chilled bowl and whip on medium speed, gradually adding the powdered sugar until soft, pillowy peaks form.
- Prepare coconut cream. Scoop the solid fat from a chilled can of full-fat coconut milk into a separate chilled bowl and whip until smooth and velvety.
- Assemble the base. Spread an even layer of the whipped cream or yogurt over the dry watermelon round, leaving a half-inch border of red fruit and rind visible around the edge.
- Garnish with fruit. Arrange the fresh berries, cherries, and peach slices on top of the cream, pressing gently, then drizzle with warm wildflower honey just before serving.
Notes
- Ensure the watermelon surface is completely dry to prevent the cream topping from sliding off the base.
- Always chill your mixing bowl and beaters beforehand to guarantee the whipped cream maintains its structure.
- Keep the assembled pizza refrigerated until the very last moment to ensure the cream stays light and firm.
- Wipe your knife with a warm, damp cloth between each slice to ensure the cuts remain clean and professional.
- Use arrowroot powder if you need to stabilize the whipped cream during particularly humid summer afternoons.
